Mentorship is not about teaching technique — there are recipe books and YouTube channels for that. It is about showing up, sharing the unglamorous parts of the craft, and trusting young cooks with real responsibility on a real pass.
The next generation of Scottish chefs is in good hands. Watching them work, ask sharp questions, and quietly raise their own standards through the night is the best confirmation of that you could ever hope for.
