Crispy Roast Potatoes Recipe
Ingredients
1 kg (2 lbs) potatoes
Oil
1 tsp dried rosemary
Pepper & Salt
Fresh parsley garnish
Instructions:
Preheat Oven: Preheat your oven to 200°C (400°F).
Prepare Potatoes: Peel the potatoes if desired and cut them into even-sized chunks. Rinse under cold water to remove excess starch, then pat dry with a kitchen towel.
Parboil Potatoes: Place the potato chunks in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and simmer for about 8-10 minutes, or until the edges are slightly tender. Drain well and shake the potatoes in the colander to roughen their edges—this helps create a crispy texture.
Season Potatoes: In a large bowl, toss the potatoes with olive oil or melted butter, garlic powder, rosemary, salt, and pepper until evenly coated.
Roast Potatoes: Spread the potatoes on a baking tray in a single layer. Avoid overcrowding to ensure crispiness. Roast in the oven for 40-50 minutes, turning them halfway through for even browning, until golden and crispy.
Serve: Garnish with fresh parsley if desired, and serve immediately as a side dish or snack.
